2 zucchini'sCooking SprayLight Dusting of Powdered Thyme (optional)
1. Preheat oven to 425 degrees.
2. Chop zucchini into 1" slices, then cut each slice in halves or quarters, depending on the size of the zucchini.
3. Spray a baking sheet with cooking spray.
4. Place the zucchini on the baking sheet.
5. Spray zucchini with cooking spray.
6. Lightly dust with powdered thyme.
7. Roast until brown on both sides, about 10 minutes on the first side, then flip with a spatula and cook another 5 minutes.
Serves 1.
