Lis's Tofu Scramble

Ingredients
Organic Tofu - Extra Firm, drained and pressed 1 blockOnions, raw, .5 cup, choppedGreen Peppers (bell peppers), 0.25 cup, choppedGarlic, 1 cloveOlive Oil, 2 1tspTurmeric, ground, .5 tspCoriander seed, ground .5 tspCumin seed, ground .25 tspNutritional Yeast 1/4 cupSalt, .25 tspPepper, black, .25 tsp Vegetable Broth, .25 cup
Directions
*Spice amounts are approximate, I didn't measure them.

Heat the oil in a large skillet over medium heat. Add the onions, green pepper, and garlic. Cook until softened, stirring occasionally. Add the turmeric, coriander, and cumin. Add some veggie broth to deglaze the pan. Crumble the tofu in your fingers as you add it to the pan. Add the nutritional yeast and stir. Salt and pepper to taste. Let cook until tofu is cooked through, about 10-15 min. If the pan dries out, add more veggie broth. Serve with whole grain toast or potatoes/hashbrowns.
