Egg Burrito

Ingredients
* Egg substitute, liquid (Egg Beaters), 1/4 cup * Spinach, fresh, 1/4 cup * Milk, nonfat, 1 oz * Cheddar or Colby Cheese, Low Fat, 1 slice (1 oz) We use one Sargento colby stick or one slice low fat cheese. Dices * *La Tortilla Factory - Low Carb Tortilla, 1 * Tabasco Sauce, three drops (optional) * Salt/Pepper to taste
Directions
Chiffonade (cut into thin strips) the spinach. Heat omelette pan to medium/medium high heat. Spray with cooking spray. Add spinach and a pinch of salt. You may need to add a touch more cooking spray. Saute until spinach is fully wilted and cooked, about three minutes. Spinach will be less than half its initial volume.

While spinach is cooking, combine "eggs", milk, salt, pepper and Tabasco in a small dish. I use the measuring cup I measure the eggs in, just poring the milk in with the eggs and then adding the spices. Mix until spices are mixed.

Spray pan with a touch more spray. Pour egg mixture over the spinach, shaking/rolling the pan to get the eggs to fully cover the bottom of the pan. Cook until bottom is set Lift edge of eggs and allow uncooked eggs to flow to the bottom of the pan. Sprinkle cheese on one half of the eggs. Allow to start to melt. Fold other side of omelette over the cheese. Cook an additional 30 seconds and then remove from heat.

Lay tortilla on plate. Microwave for 15 seconds. MAY BE HOT coming out of the microwave. Slide eggs onto tortilla so that you can roll tortilla around eggs.

Serve.

We use a variety of cheeses. Low fat slices, low fat cheese snacks or Laughing Cow low fat wedges.
