Roasted Red Pepper Hummus

Ingredients
1/2 cup roasted red peppers (in juice)2 Tbs water1 can chickpeas2 Tbs tahiniJuice from 1 lemon2 Tbs olive oil1 garlic clove
Directions
Put all ingredients into a blender and puree until smooth. If needed, add 1-2 Tbs of water (or juice from roasted red peppers) to achieve desired consistency. Remove from blender and serve cold.

Makes 6 servings (1/4 cup servings)
