hearty lower sodium chicken noodle soup

Ingredients
10 c water6 tsp chicken bouillon1 1/2 chicken breasts, boneless skinless-frozen is okay3/4 c raw onions, chopped3 cloves garlic, minced1/2 c celery, chopped (include leaves)1 tbsp dried parsley1 c mixed vegetables, frozen (no lima beans)8 oz fettucini noodles (spinach or regular)
Directions
Put water in stew pot, set on stove and turn on high. Add chicken bouillon, stir. Drop in chicken breasts gently then add onions, garlic and parsley. Allow to boil then turn to medium and cook for 10 minutes. Remove chicken, dice it and return it to the pot. Add frozen vegetables and fettucini, and cook until noodles are tender. May be served immediately but is better the second day, though you may have to add a little additional chicken broth, as the noodles will soak it up.

Makes about 8 servings.
