Davy Lemon Chicken Soup

Ingredients
12 Cups Chicken Broth2/3 cup Wild Rice3/4 cup chopped celery3/4 cup chopped onion3/4 cup chopped carrot2 Chicken Bouillon cubes6 eggs6 Tbsp Lemon Juice4 Tbsp Butter4 Tbsp FlourI large can chicken breast, drained
Directions
Bring first 6 Ingredients to a boil. Let simmer for 20 min.
Beat Eggs until frothy in a bowl and slowly add lemon juice.
In a separate pot, melt butter and mix in flour until thickened to make a rue.
Pour 1 cup of stock mixture into rue at a time until you have added 4 cups. Slowly mix in the egg and lemon.
Gradually pour 1 cup of this back into stock mixture at at a time until all is mixed in.
Add can of chicken
Simmer until ready to eat
