Easy Cheesy Mashed Cauliflower

Ingredients
1 medium head cauliflower, florets broken apart into chunks2 wedges LIGHT Laughing Cow Cheese1.5 T Light Smart Balance with Flax OilSalt and pepper to taste
Directions
Wash off cauliflower and remove green leaves. Break apart into medium sized florets. Steam cauliflower on the stove for about 10 minutes, or until florets are fork tender.

Remove cauliflower and place in a large mixing bowl. With a potato masher (or whatever mashing tool you can find), mash the cauliflower until it looks like lumpy mashed potatoes. (Side note: you could probably puree the steamed cauliflower if you like your mashed potatoes smooth, but I prefer the lumps!).

Add the Smart Balance and 2 cheese wedges and blend until no large lumps are visible. Season with salt and pepper to taste.
