veg omelette

Ingredients
2 tsp olive oil1/4 c onion1/2 c broccolli, chopped4 cups bok choy3 large eggs1tsp dry basil25 green olives, chopped50grams old cheddar
Directions
oil in cast iron pan
fry the veggies until 1/2 cooked

mix eggs, basil and olives, pour over veg.
scrape and flip while cooking

cheese on top, broil until melted
