Bran Flax Muffins1 ½ cups white flour¾ cup ground flax seeds¾ cup oat bran cereal1 cup brown sugar2 tsp. baking soda1 tsp. baking powder ½ tsp. salt 2 tsp. cinnamon*Mix together in a large bowl1 ½ cups finely shredded carrots2 pealed and shredded apples or pears½ cup raisins1 cup chopped nuts*Stir into the dry mixture, if you don’t want nuts you can add extra raisins or cranberries.¾ cup moil1 extra large egg1 tsp. vanilla*Combine liquid ingredients in a small bowl, add to dry ingredients. Stir just until moist. Bake at 350o for 20 minutes.

I made these for breakfast throughout the week but had one for a night snack tonight when I made them. They are awesome!! I will make these again. Next time I might cut the brown sugar in half and use splenda for the other half. I made the recipe the way it is listed this time. - 7/23/10
