Honey Mustard Roasted Garlic Chicken

Ingredients
1 lb potatoes (wedged)2 lbs chicken breast6 med carrots (sliced)2 Tbs EVOO1 1/2 Tbs honey3 Tbs mustard1 tsp rosemary2 heads garlicsalt & pepper to taste
Directions
Preheat oven to 425 F, in a shallow pan, toss potatoes & carrots with oil, salt & pepper. Peel the garlic heads and remove the cloves, nestle the garlic amongst the vegetables and scatter the rosemary on top. Arrange the chicken among the vegetables & bake uncovered for 30 min.

Stir together the mustard & honey, and spread over the chicken. Stir veggies, return chicken to pan, place back into the oven and bake additional 10-20 min, until chicken is cooked and veggies are tender.

Would probably be great with a variety of root veggies (parsnips, turnips, etc.)

    It's not clear whether one uses boneless skinless chicken breasts or not. I used boneless skinless, and added shallots to the mix (because I like them), but I think I would decrease the temperature next time, since they cooked fast and got a bit dry. - 4/5/08
