Asian Beef Summer Rolls

1 LB Extra Lean Ground Beef2 TBS Reduced Sodium Soy Sauce2 tsp Fish SauceThe Juice Of 1 Lime1 TBS Packed Brown Sugar2 tsp Freshly Grated Ginger2 Gloves Of Garlic Finely Minced2 tsp Sambal Oelek1 Large Carrot, GratedHalf Of A Cucumber, Peeled And Cut Into Thin Lengths1 Bunch Of Romain Lettuce Hearts, ShreddedHalf Of A Thinly Sliced Onion (Optional)1 Cup Finely Chopped Cilantro12 Large Rice Papers
Brown the beef in a pan. Rinse the beef in a colander under hot water to remove excess fat.
Finely chop the beef in a food processor.
Add the brown sugar, soy sauce, fish sauce, ginger, garlic and Sambal Oelek. Stir to combine and set aside.
Prep the vegetables.
Fill the sink with warm water, working one at a time soak a sheet of rice paper and let "sit" flat on your counter. Divide the meat and vegetables evenly to fill 12 papers. Fold the ends of the rice over each side and carefully roll the rice paper away from you, like you would a burrito.
Continue until all have been made.
You can add chopped peanuts and other vegetables that you would like. You can also make a dipping sauce.
Serving Size: Serves 4 @ 3 Rolls Per Serving.
