Ingredients
1 cup black-eyed peas (canned is okay01/2 cup cooked white rice 1 T chopped onions1 tsp olive oil 6 medium asparagus spears
Directions
white rice: I keep little 1/2 C bags of rice in the freezer; ready when I need them!

saute asparagus in olive oil until crisp-tender; chop into 3" pieces; put all ingredients into micro-waveable bowl and nuke for about 2 minutes. Done!
