2 tbsp olive oil1 cup sliced onion4 cloves garlic, sliced or minced1 tbsp curry powder (or to taste)8 oz cooked salmon (can be canned but fresh is better)4 cups cooked brown rice (or white if you prefer)3 boiled eggs1 cup frozen peas, thawed.
Heat olive oil in large frying pan, saute sliced onion until deep brown (can be crispy). Remove onion from pan and use as garnish, or leave in.
Add garlic, saute at low heat until softened, stir in curry powder and heat for 1 minute more. Stir in cooked rice, cooked salmon and thawed peas, leave on heat until warmed through. Chopped boiled eggs may be added, or used with onion as garnish.

Serving Size: makes 4 servings, each with 1 cup rice and 2.5 oz. of salmon.
