Peanut Sauce

Ingredients
1/4 c. peanut butter2 tsp. soy sauce1 tbsp. brown sugar1 tbsp. lemon juice1/4 c. water2 drops coconut extract (instead of coconut milk)hot pepper flakes to taste2 tbsp. garlic, and chili garlic sauce
Directions
cook all together, serve over noodles, garnish with cucumber slices, sliced green onion, and carrot shreds. I mix mine up in a microwave-safe bowl, and nuke it a minute or two. This is really fast and easy. Use shirataki tofu noodles for low carbs.
