Healthy Lo-Fat Shrimp Salad

Ingredients
16-18oz small salad shrimp peeled, cooked and well drained(*NOT the canned kind which are mushy- use the frozen ones and just thaw in water) 3 stalks celery- diced finely.5 small red onion- finely minced1 small avacado(.5 cup diced)1 small tomato(1 cup diced)6 Tbls far free mayo2-4 Tbls greek yogurt like Fage1 Tbls lemon juce(the yeild of half a small lemon).5 teas garlic salt.5 teas black pepper( more of less to taste)
Directions
Thaw shrimp in cold water

meanwhile chop celery onion and tomato finely.

Dice avocado and toss with lemon juice

Drain shrimp well and mix in with all veggies and all remaining ingredients. Stir well.

I serve in a martini glass placed on a small salad plate with a paper doily. I place baby carrots,a few olives, triscuits & cheese on plate underneath glass- gorgeous!

Serving Size: makes 3 huge entree size salads or 4 side salad servings
