German Pancake

Ingredients
2 Large eggs1/2 c. non-fat milk1/2 c. flour1/4 tsp. saltpinch of ground nutmeg1 tbsp mild olive oil 1/4 Confectioner sugar, siftedLemons
Directions
Preheat oven at 450 degrees
Use 2- 9-10 inch ovenproof skillest (glass or metal pan is okay too)

In blender combine all ingredients,except oil.

Divide oil between both pans. Heat in oven for 5 minutes. When very hot, divide batter between pans and bake 18-20 minutes until brown. Do not open oven during cooking time

Remove from pan. Sprinkle with confectioner sugar and lemon

Serving Size: Makes 2 pancakes
