Marcia's Tomato Basil Soup

Ingredients

1/2 sweet onion - diced2-1/2 c chicken stock (fat free, low sodium)1/2 c white cooking wine3 cans (28oz ea) whole peeled tomatoes3 tsp dried basil1 c milk 1%
Dice one half a sweet onion and place in medium stock pot with 1/2 cup of the chicken stock (add salt if desired) and saute onion until softened and opaque. As the stock begins to boil out of the onion, pour in all of the white cooking wine. Add all three cans of tomatoes, dried basil, and the rest of the chicken stock. Bring to a boil and them reduce to simmer for approximately 20 minutes stirring on occassion. Remove from heat and place in batches into blender and puree until smooth. After well blended, stir in milk and and serve. If desired, add salt and/or pepper to taste...
This soup is great for adding turkey meatballs or turkey sausage. I often add some fresh grated romano cheese as well!
