Ingredients
2TBS Smart Balance1/2 c onion1/2 c red Bell1/2 C Zucchini2 small plumb tomatoes diced1 Tbs Basil chopped fresh1/2 c egg substitute1/2 c 1% cottage cheese1/4 c fat free evaporative milk3 oz shredded Monterey Jack cheese
Directions
Sautae veggies in smart balance
Blend egg- cottage cheese & milk
Pour mixture over sautae veggies
cook until bottom is set top is wet
transfer to skillet to broiler- broil 2-3 min
sprinkle with cheese then broil till melted
