Veggie Ground Beef Skillet

Ingredients
2 tsp Canola Oil73 g chopped white onion96 g chopped yellow bell pepper117 g sliced white mushrooms198 g sliced baby zucchini200 g broccoli crowns175 g frozen corn kernels725 g extra lean ground beef2 tsp Mrs. Dash Salt-free Southwest Chipotle Seasoning
Directions
Heat oil in non-stick skillet; add onion, peppers and mushrooms and saute until soft. Add zucchini, broccoli and corn, cook until all vegetables are soft. Remove from skillet and set aside. Brown ground beef, add seasoning and add vegetables back in to skillet, cook 10 minutes longer to combine flavors.

Makes 8 1 cup servings.

Serve alone or with pasta, rice or potatoes.
