Double Delicious Lo Mein

Ingredients
1 (12 oz) box whole wheat spaghetti½ c plus ¼ c Swanson 99% fat free chicken broth½ c sweet potato puree2 T reduced sodium soy sauce1 t firmly packed dark brown sugar1 t sesame oil2 t cornstarch2 T extra virgin olive oil3 cloves garlic minced4 green onions, white ends only, thinly sliced4 (6 oz) center cut pork chops or cutlets, trimmed of fat and cut across grain into ¼ inch thick slices
Directions
Cook the spaghetti according to the package instructions and set aside. In a medium bowl, whisk the ½ c chicken broth, sweet potato puree, soy sauce, brown sugar, sesame oil, and cornstarch. Set aside.

Heat the olive oil in a large skillet over medium-high heat. Add the garlic, green onions, and pork. Cook until the garlic and onions become fragrant and the pork begins to brown, 4 to 5 minutes.

Add the soy sauce mixture and spaghetti to the skillet. Reduce the heat to low. Cook 1 to 2 minutes more, stirring well, until a thick sauce forms and coats the noodles. Add the remaining chicken broth if the sauce is too thick. Serve immediately.
