Oatmeal, Currant, Date Cookies

1 cup whole wheat pastry flour1 cup quick cooking oats1/2 cup applesauce, unsweetened1/2 cup currants (or raisins)2 tablespoons Agave Nectar2 tablespoons Sucralose (Splenda or Altern)2 tablespoons Sunsweet lighter bake6 dates, pitted1 small banana, very ripe1 teaspoon baking powder1/2 teaspoon cinnamon1/8 teaspoon salt
Preheat oven to 350 degrees farenheit.
Mix together flour, oats, sucralose, baking powder, salt and cinnamon and set aside.
Process in blender or food processor: applesauce, banana, agave nectar, Sunsweet lighter bake, dates. Add to dry mixture along with currants and mix until combined (do not overmix).
Drop by spoonfuls onto nonstick cookie sheet. Slightly flatten, as these will not spread out while baking. Bake for 10 minutes.
These are best right out of the oven!
