Maple Roasted Chicken Thighs with Sweet Potatoes

Ingredients
4 large skinless chicken thighs (1.5 lbs)1 1/2 lbs sweet potatoes, peeled and cut into 1 inch chunks1 small onion, cut into 1 inch pieces12 oz baby carrots or parsnips, cut into 1 inch chunks1/4 cup reduced calorie pancake syrup
Directions
1. Preheat oven to 450 degrees.
2. In shallow baking pan or cookie sheet with rims, combine everything. Add 1 t salt and 1/2 t pepper. Toss to coat.
3. Roast 40 - 45 minutes, until juices run clear in thickest part of thigh. Flip chicken halfway through and stir vegetables once.
