Pancake for One

Ingredients
1/3 c. cottage cheese1/3 c. oats1/2 t. vanilla extract2 egg whites (or 2 T. albumina with 4 T water)
Directions
Mix all in blender. Spray iron spider (frying pan) with Pam or lightly oil; heat up. Pour in batter. Turn down temp. and be careful not to burn. Carefully flip (works best if you can use two pans - OR make smaller pancakes). Amazingly this tastes lightly sweet. Top with your favorite topping and enjoy!
