Cheesy Broccoli & Quinoa Soup

Ingredients
1 1/2 cups of unsweetened Almond milk6 cups of gluten free chicken broth6 cups of fresh broccoli1 Cup cooked Quinoa1/2 cup of flour, plus 2 TBSP more3 cups of shredded mild cheddar cheese4-6 pieces of turkey bacon

Directions

STEP 1 - Wash and cut broccoli florets. Put in a steamer for about 12 minutes. Also, boil 2 cups of water and cook 1 cup of Quinoa according to the directions on the package.

STEP 2 - Pour 1 1/2 cups of unsweetened almond milk into a large pot.

STEP 3 - Add 6 cups of gluten free chicken broth to pot. Turn on medium-high heat.

STEP 4 - Slowly stir in flour. Stir mixture until it thickens and starts to boil. Then, cook on low heat for 5 minutes.

STEP 5 - Place steamed broccoli in a food processor and chop into tiny pieces.

STEP 6 - Add broccoli to the soup mixture.

STEP 7 - Stir in cooked Quinoa.

STEP 8 - Add in the delicious 3 cups of shredded mild cheddar cheese. Stir until melte

STEP 9 - Serve with a small amount of turkey bacon on top. Enjoy!
