Baked Ziti with Turkey Sausage

Ingredients
3/4 lbs raw turkey sausage, casings removed1 medium onion chopped1 medium green pepper chopped28 0z canned diced tomatoes2 Tbsp tomato paste1 tsp dried oregano1 tsp dried basil1/2 tsp dried thyme1/2 tsp fennel seed1/2 tsp salt1/2 tsp black pepper12 oz. uncooked whole wheat pasta cooked according to package directions6 oz shredded fat free mozzarella cheese
Directions
Preheat oven to 350 degrees.
Cook pasta according to package. Set aside.
Crumble sausage meat into large sauce pan and brown over medium heat, stirring often--about 4 minutes.
Drain off any fat then add the onion and bell pepper. Cook, stirring often, until softened, about 3 minutes.
Stir in tomatoes, tomato paste, oregano, basil, thyme, fennnel seeds, salt and pepper. Bring to a simmer, then reduce the heat and cook uncovered 5 minutes, stirring often.

Stir in the pasta and half the grated cheese. Spread evenly into a 9X13X in baking pan. Top evenly with the remaining cheese.


Bake in oven at 350 degrees for 20 minutes. Let stand at room temperature for 10 minutes before slicing into 8 equal portions.
