Leftover Lamb & Rice Casserole

Ingredients
2 c cooked lamb, diced2 c cooked rice1 can chopped tomatoes, with juice1/2 c chopped onions1/2 c sliced mushrooms2 pats butter2 oz fat-free Feta
Directions
Saute onions in butter until soft.
Add mushrooms and cook until browning begins.
In a large mixing bowl, combine all ingredients.

Spread in casserole dish, bake for 30 minutes at 350F.

Optional: 2 tablespoons red wine stirred in with mushrooms and onions for full flavor.
