Dottie's Homemade Spaghetti Sauce

Ingredients
2 lbs. ground beef, browned and drained well2-3 garlic cloves, minced or chopped 1 c. chopped fresh celery1/4-1/3 c. chopped onions2-3 cans of tomato sauce, or diced tomatoestomato paste, 1 small 6 oz. can1 tbsp. sweet basil, ground or crushed dried leaves1 tbsp. oregano, ground or crushed dried leaves2 tbsp. sugar
Directions
Makes about 10- half cup servings of sauce.

While bringing 4 cups of salted water to a boil with a tbsp. of oil in a large pot for the noodles, I begin to brown the meat in a 10-12 inch skillet. Cook on med. high heat, breaking it up into small chunks. While it is browning, I cut up the celery, onions, and mince the garlic. When meat is done browning, I drain off the fat. I empty out the browned meat on several layers of paper towels that is placed on a dinner plate.

A healthier version, without sacrificing the taste, is to drain off the meat from the fat. Place the meat in a mesh strainer and run very hot water over the ground beef to rinse off any lingering fat. Place on several layers of paper towels on a dinner plate. And use a small amount of olive oil or 'healthy' oil to saute the vegetables.

Add the noodles to the pot of boiling water.

After the vegetables are sauted, add the meat back into the pan, add in the following: tomatoe sauce and/or diced tomatoes, tomato paste, basil, oregano, and sugar.

Simmer for about 15-20 min., usually when the pot of noodles are done. Stir occationally to prevent the sauce from burning on the bottom of the skillet.
