green lentil w/ soyrizo

Ingredients
1 cup green lentils1 carrot chopped1 onion chopped1 bay leaf1 sprig of thyme4 cup or chicken stock or water or both mixedsalt and pepper to taste4 oz soyrizo3 tsp olive olive
Directions
-soak lentils in cold water for 2 hours
-simmer lentils, carrot, onion, bay leaf, thyme, in 4 cups of chicken stock or water. until lentils are mushy. 45-90mins
-blend soup in a blender. (do 1 cup at a time to aviod cracking blender and making a mess)
-slowly reheat soup add salt and pepper to taste
-heat olive oil and add soyrizo cook for a few mins, then mix in with the rest of the soup.
