Lundberg Wild Blend Brown Rice-1/2 cup dryOlive Oil, 1 tbspTomatoes, red, ripe, raw, year round average, 5 medium whole diced Asparagus, fresh, 6 spear, medium choppedPeppers, sweet, red, fresh, 1 medium (approx 2-3/4" long, 2-1/2" choppedJalopeno pepper, 1 minced (optional)Onions, raw, 1 small choppedGarlic, 3 cloves mincedMushrooms, fresh, 1 cup, choppedBlack Beans - PC Blue Menu, 540 ml canCumin 1 tsp Paprika, 1 tbsp Chili powder, 1 tspCilantro, dried, 1 tsp
Cook rice as per instructions.
While rice is cooking, prepare vegetables. Put all vegetables except tomatoes in a large deep dish fry pan and saute in olive oil until onions are clear. add tomatoes and seasonings and simmer for 5-10 minutes on medium low heat. Add rice and beans, continue to simmer for another 10 minutes.
This is great on its own, or topped with cheese and served with nacho chips.
