Smooth Potato Soup

Ingredients
3 raw Celery stalks, chopped1 raw medium Carrot, chopped1 raw medium onion, chopped8 raw medium Potatoes, chopped 3 strips of Bacon, chopped8 cups of Water1 can of evaporated Milk (non-fat or nomal, depending on taste. recipe calculated with normal)spices to taste, e.g. garlic salt, crushed red pepper ectolive oil cooking spray2 cubes of Beef Broth
Directions
Spray a big pot with olive oil cooking spray and fry the bacon for a couple of minutes.
Add the chopped celery, carrot and onion, and sauté them for about 5 minutes, add more spray if necessary.
Add the water, the broth cubes and the potatoes, chopped into small pieces.
Cover and let it cook over medium heat until it comes to a boil.
Add the evaporated milk, stir and cover again.
When the potatoes are tender, take off heat and let cool slightly.
Then take a hand blender and smooth out left over chunks.
Add spices to your liking.
I like to add garlic salt, a little crushed red pepper and all season salt.
