I love to make this creamy soup for lunch. It's cheap, filling, packed with nutrients, and it doesn't take all day to make. My husband loves it and my kids like it depending on the day. Number of Servings: 10

Ingredients

    4 tsp. smart balance buttery spread or margarine
    2 c. onion, chopped (or 3 c. sliced leeks, white part only)
    1 c. carrots, chopped
    1 c. celery, diced
    6 c. fat-free chicken broth
    4 c. diced potatoes
    1/4 tsp. black pepper

Directions

Melt buttery spread in pan over medium heat. Add onions, celery and carrots until onion is nice and tender. Add chicken broth, potatoes and pepper. Cook 15 min. or until potatoes and carrots are soft. Process in a blender. I had to split the batch in half to allow it to fit into the blender. Makes 10 1-cup servings.

    I used butter instrad of spread or margarine and stock vs. broth. - 8/6/17
