Mom's homemade Squash Soup Mom's homemade Squash Soup
Number of Servings: 4


    1 Can Low Sodium Chicken broth
    1 Glove garlic minced
    8 cups shredded or sliced summer squash (with skin on)
    1/2 cup Fat Free Sour Cream
    Parmesan to taste


Add Chicken broth to a large pot
Add minced Garlic
Add shredded/sliced squash
Cook until squash is soft

Use puree stick/Food processor or Blender to smoth the soup
Add 1/2 cup of sour cream and stir

serve and sprinkle with Parmesan cheese.

You can add slightly steamed thin slices of squash if you want too.
