sauteed swai with vegetables

Ingredients
Heat 1 tablespoon olive oil in large skillet over medium-high heat. Add bell pepper, red onion and garlic and saute until vegetables begin to soften, about 5 minutes. Remove from pan and set aside. Sprinkle swai fillets on both sides with salt and pepper. To pan add remaining 2 tablespoons of olive oil. Add the swai fillets and brown on each side, about 3 minutes per side. Return vegetable mixture to pan and cook for 2 minutes or until heated. Place fillets topped with vegetables on individual serving plates
