Vegetable Pizza

Ingredients
170g frozen bell peppers340g frozen cauliflower1 large egg112g shredded mozzarella cheese1 cup Ragu light saucevarious herbs as desired (optional)
Directions
Preheat oven to 450 degree (F)
Microwave cauliflower to thaw it out
Grind the cauliflower in a food processor until it looks like rice
Mix together the cauliflower, egg, and 1/4 of cheese in a 9*13 inch pan (I use glass)
Flatten the mixture to cover entire pan bottom
Cook in oven for 8 minutes at 450 degrees
Set oven to broil and cook an additional 2-4 minutes (until top of crust is lightly browned)
Spread out Ragu sauce, chopped bell peppers, and the rest of the cheese on top of crust.
Broil in oven for 2-4 minutes (until top of pizza is lightly browned)

Serving Size: makes four 4.5*6.5 inch pieces
