1 pkg lean ground turkey1 small onion, chopped2 garlic cloves, pressed1 pkg chili seasoning3 stalks of celery, chopped1 med red bell pepper, chopped2 large carrots, sliced2 cans (15 oz) black beans2 cans (15 oz) petite diced tomatoes3 cans (15 oz) 99% ff beef broth
In a non-stick large dutch oven or large soup pan, saute turkey with chopped onion and garlic. Stir in chili seasoning to meat. Add all the veggies. Drain black beans and rinse, add to pan with tomatoes and beef broth. Bring to boil and boil at medium-low for about 2 - 3 hours. It will be done when broth has boiled off.
Freezes great, and is even better the next day!
