Ingredients
1 whole onion, chopped1 clove garlic, chopped4 mushrooms, sliced4 baby carrots, sliced.5 green pepper chopped1 zucchini, sliced 1 tomatillo, chopped1 tomato, chopped
Directions
Spray pan with cooking spray and heat, chop the vegetables and add to the heated pan in the order listed. Stir and cook over medium to high heat until soft and cooked through.
Add a little water if the vegetables start to stick to the pan.
Add salt and pepper to taste.
Serve as a side dish, or over pasta.
Makes about 4 half cup servings
