"Runners" Pancake Sandwich

Ingredients
Directions
1 cup old fashioned DRY oatmeal1 cup egg beaters1/3 cup diet maple syrup1/2 tsp baking powder1 tablespoon cinnamon2 tablespoons flax seed meal2 tsp splenda1 cup frozen blueberries4 tbls peanut butter
Mix all ingredients together, except peanut butter. Let set 5 minutes. Drop by icecream scoop on hot skillet, sprayed with Pam. Should make 8 pancakes. Turn when bubbles form.
Remove to rack to cool. When cooled, spread 1 tbls peanut butter on pancake & top with another pancake to make sandwich. Wrap and store in frig for a quick breakfast on the go.
Batter will be thick......can thin down with a little water if desired
