Loaded Oatmeal Muffins

Ingredients
1 Cup Buttermilk1 Cup regular rolled oats (not quick)1 Large egg1 large shredded carrot1 shredded Granny Smith apple1/2 cup canned pumpkin1/4 Splenda Brown Sugar Blend1/2 Cup melted butter1 cup flour1/4 tsp baking soda1/4 tsp salt1 tsp baking powder1/4 tsp nutmeg1/2 tsp cinnamon1 Scoop protein powderDark chocolate chips
Directions
Soak oats in buttermilk for 1 hour. Add beaten egg, melted butter,pumpkin, carrot, apple, chocolate chips and brown sugar. In separate bowl mix remaining ingredients. Gently fold dry ingredients into wet ingredients. Spoon into greased (Pam) muffin tin and cook at 375 until done.
