Egg White Breakfast Casserole

Ingredients
Egg Whites - 32 oz cartonMushrooms sliced - 8 ozSpinach - 3 ozAsiago or other hard cheese shredded - 3/4 CSalt/PepperHot Sauce
Directions
Spray 9 X 13" pan with Olive Oil Pam
Put spinach on bottom of pan
Put mushrooms on top in one layer
Pour eggs over top
Salt/pepper
Sprinkle with Asiago
Add hot sauce to top to taste
Bake in 375 oven for 50 minutes

Serving Size: Cut into 6 equal pieces

    Easy to make and very delicious. I did add diced tomatoes to add some color since I served it with the hot sauce on the side. Tasted much better than it looked since it does cook a little flat. Took it to work a party and it was one of the first items gone. I will make it again! - 2/6/15

    This was so easy to make and yummy! Wish it was a little bit fluffier, but the taste is wonderful. It is very filling, as well. I'm dieting and the leftover casserole was great the next couple of days. I am making it again tomorrow. Loved it!
