Banana raisin spice bread (or muffins)

Ingredients
10 large, ripe Bananas, mashed1/4 c. Apple butter 4 large eggs2 tsp Vanilla extract6 c. All-purpose flour4 tsp Baking soda2 tsp Salt1 Tbsp ground cinnamon1 tsp ground allspice1 Tbsp ground cardamom1 tsp ground cloves4 c. Strong brewed coffee1/4 c. minced fresh ginger4 c. Raisins
Directions
Sift together flour, salt, baking soda, cinnamon, cloves, allspice, and cardamom.

In separate bowl cream together mashed bananas, apple butter, vanilla and eggs.

Alternately add in coffee and flour to creamed banana mixture until fully blended.

Fold in minced ginger and raisins.

Cook in preheated oven (350F) in greased pans. 20-25 minutes for muffin trays and 60 minutes for large loafs. (I used a 12 muffin tray and a 13x9x2 roasting pan for my batter.)

Test for doneness by poking toothpick or knife blade into the center of the bread/ muffin. Bread is done when toothpick or knife comes out clean.
