Hearty Breakfast Burrito

Ingredients
1 whole egg1 egg white2 shakes of lemon pepper1/4 cup whole red beans 1 green onion, chopped1 cup freshspinach1 whole grain tortillasalsa to taste
Directions
In a bowl, beat together egg, egg white, green onion, and lemon pepper until egg color is consistent. Heat a 10" non-stick pan on low. Pour egg mixture in pan, stirring frequently with a silicone spatula. As eggs firm, add beans and keep stirring. Cook until desired texture, approximately 3 - 5 minutes.

Place egg mixture on tortilla. Add spinach and salsa. Enjoy!
