Bird's Nest Breakfast Cups

Ingredients
12 Turkey bacon strips1-1/2 cups egg substitute6 Tbl shredded reduced-fat Mexican cheese blend1 Tbl minchd fresh parsley
Directions
1. In a large skillet, cook bacon over medium heat for 2 minutes on each side or until partially set but not crisp. Coat 6 muffin cups with cooking spray; wrap bacon strips around the inside of each cup. Fill with 1/4 cup egg substitute; top with cheese.

2. Bake at 305 for 18-20 minutes or until set. Cool for 5 minutes before removing from pan. Sprinkle with parsley.
