2 large boneless, skinless chicken breasts, cubed1 medium yellow summer squash, sliced1 medium zucchini squash, sliced1/2 package frozen mixed vegetables4 cups low sodium chicken broth1/4 c lite soy sauce (I prefer Bragg's liquid aminos)3 green onions. chopped6 - 8 baby potatoes, cut in half to absorb the flavor bettera couple sprigs fresh dill weed, torna couple sprigs fresh cilantro, torn1/2 c tomato sauce
Put everything in a large pot and simmer until potatos are tender and chicken is cooked through. Can be ready in as little as 30 minutes, or can be simmered all day.
