Stacey's Chicken Vegetable Stew

Ingredients
1 tsp Canola Oil74 g diced onion78 g chopped celery86 g chopped carrot271 g cubed potatoes308 g cubed bnls/sknls chicken breast1 c chicken broth
Directions
Heat oil in large non-stick pot; add onion, celery, carrot and potato and cook until soft. Add 1 cup water and 1 cup broth, add cubed chicken and salt-free seasoning of choice(I use Mrs. Dash Salt-free table blend, which has no caloric values). Let come to a boil, reduce heat and simmer until chicken and potatoes are cooked through. Add one more cup water and slurry with cornstarch or flour to thicken if you choose.

Makes 6 one cup servings.
