Pork and Sauerkraut (crockpot style) from Rosi

Directions
Trim any visible fat or rind from outside of roast. Rub with Sea Salt and ground pepper.
In large skillet brown the roast in approx 1 T. olive oil
In In 6-7 qt. crockpot layer approx 1/4 thin slice sweet onion on bottom, lay browned roast on top ,add 2 bags sauerkraut + garlic on top and around roast. pour beer and sprite / sierra mist/ 7up or mountain dew over top. Add Mrs. Dash if desired
Put crock pot on high appox. 6-8 hrs (at least til pork is very tender and falls apart) add drained or squeezed 3rd bag of kraut if desired.
**my family LOV ES kraut so we always add the 3rd bag.**
keep on high an additional 2 hrs til kraut is tender.
