Watermelon Granita

8 cups of very ripe juicy diced watermelonhalf a cup of granulated sugarone cup of warm water1 tbsp lemon juice
Push the cubed watermelon through a sieve to remove the seeds and create a watermelon puree.
Place the water, sugar and lemon juice into a pan and cook over a low heat stirring gently, once the sugar crystals have disolved increase the heat and boil for two minutes.
Put the sugar and lemon syrup in a bowl, add the watermelon puree, stir until fully mixed.
Pour into a freezer container and freeze for two hours (fast freeze setting).
To serve use a fork to scrape the granita into ice crystals and pile into eight serving bowls.
