Coach Nicole's Peanut Butter Oat Bars

Ingredients
2 cups oats (any kind, I use thick-cut)1 cup quick cook oats1/4 tsp salt (optional)1/4 tsp cinnamon1 Tbsp unsweetened cocoa powder1/4 cup maple syrup1/4 cup skim milk (or non-dairy milk alternative)1/3 cup honey2 Tbsp canola oil1/3 cup natural peanut butter
Directions
Preheat oven or toaster oven to 350 degrees F.

Process 2 cups rolled oats in blender or food processor until they become flour-like. Mix "oat flour" with dry ingredients in a bowl.

Add all wet ingredients (except peanut butter) to the dry mixture and stir until well combined.

Add peanut butter and mix well.

Spray a small baking dish (about 5 inches x 12 inches, or similar) with non-stick cooking spray. Add mixture to the dish, pressing it down with a spatula. With a knife, cut the whole sheet into 18 bars. Bake at 350 degrees for about 20 minutes or until edges of bars are lightly browned. Let cool, cut again, and store in an air-tight container for up to one week.

    Awesome! I actually used 1/4 honey (and forgot the maple syrup), and they were still good. I'm going to try adding raisins to a batch, too. Good treat for my kids' lunches! - 4/16/11
