Shepherd's Pie with Cauliflower Mash

*Potato, raw, 1 large (3" to 4-1/4" dia.) (remove)Cauliflower, raw, 1 head, medium (5-6" dia) (remove)*Chiobani Plain Non-Fat Greek Yogurt, 4 oz (remove)Beef, round steak, 6 oz, cooked (remove)Peas, frozen, 0.5 cup (remove)Yellow Sweet Corn, Canned, 1 can (12 oz) yields (remove)Tomato Paste, 0.12 cup (remove)Beef broth, bouillon, consomme, .5 cup (remove)Cornstarch, 0.041 cup (remove)*AH - Kraft Old Cheddar Shredded (1/3 cup serving), 1 serving (remove)
Peel potato, dice. Cut cauliflower into small chunks. Cook both together in boiling water until soft. Drain and mash with Greek yogurt.
Cube leftover steak and heat in pan. Add beef broth and cornstarch, bring to a boil until thickened. Add tomato paste, corn and peas. Add spices to taste - salt, pepper, garlic, oregano, etc. Let simmer until everything is hot. Put beef mixture into the bottom of an ovensafe dish, top with mashed potato/cauliflower mixture. Optional: Top with a bit of reduced fat sharp cheddar cheese. Bake in oven at 350º until the top is browned.
