Cauliflower Florets, 1 head (approx. 500 g)1/2 Cup Grape Tomatoes, coarsely chopped3 Tbsp Bacon Pieces1/4 Cup Sharp Cheddar Cheese (Cabot 50% Reduced Fat), shredded3 Hard-Boiled Eggs, chopped2 Dill Pickle Spears, chopped1/2 Cup Canola Mayonnaise1/2 Tbsp French's Honey Dijon Mustard (w/Real Honey)2 Tbsp Kroger Zero Calorie Baking Sweetener, Splenda, or other sweetener of choice1 Tbsp White Vinegar1/2 Tbsp Lemon Juice
Layer 1/2 of the cauliflower florets, grape tomatoes, bacon pieces, sharp cheddar cheese, dill pickles, and hard-boiled eggs. Toss gently. In a separate bowl, whisk sweetener, white vinegar, and lemon juice, until sweetener is dissolved. Add canola mayonnaise honey dijon mustard and whisk until combined. Pour 1/2 of dressing mixture over salad. Toss gently to coat. Top w/remaining half of salad ingredients. Toss gently. Pour remaining salad dressing over salad. Toss gently to coat. Refrigerate. Toss gently before serving.
