2 Chicken breasts, halved and pounded thin (4 pieced total)1/4 c. flour1 tbsp. butter1 tbsp. olive oil1 c. chicken stock3 oz. dry white wine (I use a pinot grigio or sauv. blancl) 1/4 c. lemon juice (plus zest)1 tbsp. capersSalt and Pepper to taste
Melt heat butter and oil in large pan until hot. Dredge chicken breasts in flour and pan fry until cooked through and browned (about 3 min/side)
Remove chicken and keep warm
Add chicken stock and wine and deglaze pan.
Add lemon juice and zest and allow to reduce
Return chicken to pan to heat through and top with capers
Serve with rice or pasta
